Gluten Free and Dairy Free Cinnamon Vanilla Corn Flour Cake

This cake is satisfyingly heavy and sweet with cinnamon spice and vanilla. Get ready for gluten free, dairy free without anything really fancy needed!


2 cups corn flour (this is a finer grind than corn meal and it is not corn starch) I am sure corn meal would work it would just be a grainier texture.

2 teaspoons baking powder

pinch of salt (optional)

5 large eggs

1 cup granulated white sugar

1/4 cup olive oil

a splash (or two) of vanilla extract

1 cup vanilla almond milk or whatever fake or real milk you would prefer to use

lots of cinnamon (make this cinnamon-riffic!) I did a whole lot of shaking with the shaker that is for sure!

a few almonds to decorate the top of the cake (optional)


Mix all the ingredients (minus the almonds) in a big bowl

Pour mixed batter into a greased cake pan

Top cake with almonds

Bake in oven at 350 degrees for about 40 minutes

Check cake with a tooth pick, if you put it in and pull it out clean you are ready!
