Afternoon Quicky: Making Quick Breads (Specifically Cheesy Tomato And Cilantro Bread)


So you want bread in less than an hour and don’t want to fuss with yeast or kneading? Quick breads are a great way to make savory or sweet treats no matter what your craving. (I also find them easy to make even if things are not measured out perfectly). This recipe is for Cheesy Tomato and Cilantro Bread.


2 1/3 cups whole wheat flour

3 juicy tomatoes diced up (keep the juice!)

1/2 tsp baking soda

2 tsp baking powder

1-1/2 cups cubed cheddar cheese (smaller pieces are better)

1/2 cup chopped cilantro (pack the cilantro in)

2 eggs

2-1/2 tbsp olive oil

1 tbsp powdered ranch dressing (or herbs and spices of your choosing  but the buttermilk in the dressing adds to the creamy!)

1/8 cup lemon juice


Grease a bread pan with a little oil

Preheat the oven to 305 degrees

Mix the Ingredients in a big bowl. The dough should be sticky but not wet looking and everything should hold together in a big ol’ lump

Dump dough into greased pan and use fingers or spoon to push into nice shape. (Think smoothing the top to have a nice crust)

Bake for about 45 minutes


Serve plain, warm or with butter. I have served this bread with roasted garlic and black pepper spread, cheese spread and balsamic vinegar and olive oil for dipping.

      • I too am very fond of quick and easy meals, juz like you.
        It’s only on weekends I go for grand lunch/dinner. BTW have a yummilicious weekend 🙂

      • Thanks! I find with everything going on during the week and with schedules that are not set in stone, elaborate meal planning on the weekdays usually ends up in dinners being over cooked in anticipation people getting home from work! I am glad you are enjoying my posts!!!

      • My husband has been advised to cut out dairy and wheat for a two week trial so I have been planning a whole new menu to try out! I am looking at recipes using quinoa and buck wheat groats as well as rice dishes, veggie dishes, some fish dishes and using lots of spices fresh and dried to make up for the lack of dairy! Today is the first day of the new diet and I am still planning dinner for this evening : ) How was your weekend?
