If you like peanut butter, this recipe will knock your socks off! These Peanut Butter Marshmallow bars will be ready in no time! 4 ingredients only and no baking required.
1 cup butterscotch chips (if you wanted you could use chocolate chips)
1/2 cup peanut butter (I use the “just peanuts” kind without any additives)
1/4 cup butter (REAL butter, don’t try to use any of that margarine stuff)
white marshmallows (about 8 ounces, but I just add in as many as I like to create the “right” ratio of marshmallows to goo that I like)
Over medium to low heat melt butter in a pot.
Add in peanut butter and butterscotch chips. Stir constantly until smooth (you need to work fast so it doesn’t burn)
As soon as it is smooth remove pot from stove and let mixture cool a wee bit (you don’t want to melt the marshmallows)
Once the mixture is cooled a wee bit, stir in the marshmallows until they are all lightly coated
Use a spatula to smooth gooey marshmallows into a baking square
Chill in fridge (or if you are impatient you can chill in freezer)
Once the squares look like the peanut butter goo has hardened (about an hour) cut into squares and serve!
